Everyone loves grilled cheese. Bread + butter + cheddar/Swiss/Gruyere/Gouda = hell yes. The only people who don't like grilled cheese are Communists, and that's a fact. Grilled cheese is fantastic as is, but it's even better when mixed with another fattening American classic: buffalo wings.

A couple towns away from me is a fantastic restaurant called Buffalo Joe's and it has some of the best gd wings you will ever be fortunate enough to smear all over your face and clothing.
The sauces range in spice from smoldering to oh-shit-this-was-a-bad-idea.
Buff Joe's is a classic where my friends and I live and there's nothing most guys enjoy more than sitting down with a party platter of wings and 30 or so pitchers and proceeding to revolt most of the females in a 10-mile radius. They really are delicious. If Buff Joe's wings and the classic grilled cheese boned and birthed a love child, it would be this sandwich.
I found the recipe on Pinterest and didn't like it so I changed it. It called for vegetables in my mess of carbohydrates and meat. WRONG. This is really easy, and really messy and really really really really really freakin' good.
Because I didn't have any Buff Joe's sauce on hand (Do they sell it? Anyone? They should.) I used the Tabasco brand buffalo wing sauce. Pretty decent, with nice spice and a hint of smokiness. In any case, this magnificent love child sandwich is quality comfort food. For those still in school, eat it as a congratulatory meal for having finished the introductory paragraph of your final essay due Friday. For those out of school, eat it because to hell with swimsuit season. For everyone else, just eat it.
Ingredients:
1/4 c. cooked shredded chicken, warm
1 tbs. hot sauce
1/2 tbs. mayo
1 tbs. green or red onion, sliced or diced
1 tbs. celery, finely chopped
1 tablespoon blue cheese, room temperature, crumbled
1/4 c. cheddar cheese, room temperature, grated
1 tbs. butter
Directions:
1. Mix the chicken, hot sauce, mayo, celery and onion in a small bowl.
2. Butter the outside of each slice of bread, sprinkle half of the cheeses on the inside of one slice of bread, top with the buffalo chicken salad, the remaining cheese and top with the other slice of bread.
3. Heat a non-stick pan over medium heat.
4. Add the sandwich and grill until golden brown and the cheese has melted, about 2-4 minutes per side.
