My Goodness My Spinach

If you don't get this joke, you need to spend more time in weird antique stores or dive bars. One of my favorite memories from when TMo and I lived in Europe was wandering through a selection of antique stores in Ireland looking for meaningful gifts (and a shillelagh stick -- no luck there). What we did come up on in one particular spot was a truly exquisite collection of old tin beer advertisements, mostly for Guinness.

The most popular of all the Guinness ads was probably the "My Goodness My Guinness" one. Simple, catchy and perennially in style. Such is the case with this spinach and white bean soup I created for Meatless Monday. It comes together so quickly you could start making it directly after reading this and be eating within 20 minutes.

You can also always add more beans or brown rice to bulk this up -- as it is, it's pretty light (but filling, thanks to all that fiber). Whatever you do, don't skimp on the lemon. It adds great flavor and makes this soup feel super springy.

Ingredients:

8 c. stock 1 can canellini beans, rinsed and drained 5 c. baby spinach 1 small white onion, minced 4 garlic cloves, minced 1 tsp. oregano 1 tsp. fresh rosemary, minced 2 tsp. lemon zest Juice of one half lemon (or to taste) Salt and pepper to taste 1 tsp. EVOO

Directions: 1. Sauté garlic and onion in EVOO until soft. Add herbs and zest. Cook another minute. 2. Add stock and beans, simmer for 5-10 mins to let flavors deepen. Season to taste with salt and pepper and add lemon zest. 3. Stir in spinach at the last minute until just wilted. Top each bowl with fresh lemon juice and a sprinkle of pecorino romano if desired.
