I'ma Make You a Celebrity Overnight (Oats)

Hands up if you remember Twista.
Nobody? Yeah me either. Except for Slow Jamz, the 8th grade middle school dance anthem. Ah, memories. I still remember the first boy I ever "snowball" slow-danced with. Sometimes I flash on it during my darkest hours and then I quickly shake my head and do my very best to push the entirety of my time at Alan B. Shepard Middle School out of my mind. My awkward stage was seriously unkind to me.
In any case, although Twista has long since faded into obscurity, overnight oats have been -- and continue to be -- incredibly popular. For one thing, they are highly Instagrammable (#striveforgramness). For another, they are incredibly easy: throw some stuff in a jar and leave it in the fridge overnight. Reheat briefly (or eat it cold) and you have a nutrient-dense breakfast at your immediate disposal.
I tried overnight oats for the first time on an organic farm retreat (read about my trip here) and was instantly hooked. Typically I get hungry almost right after breakfast because let's be real, cereal has almost no nutritional content. In fact, Willy Wonka claimed that it was just pencil shavings and I kind of have to agree.
Therefore yesterday I went and bought a $5 bag of chia seeds at Trader Joe's and whipped up a jar of vegan maple-walnut OO's. This morning, I heated my jar in a water bath, topped it with some raspberries and descended into OO heaven.
It was cinnamony and crunchy and just the right amount of sweet. I am such a big fan. SUCH A BIG FAN. I can't wait to try some new combinations, probably including almond butter and frozen fruit (since growing season is almost over...sob).
I always see overnight oats pictures with beautiful layers filled to the brim of a mason jar but I don't quite know how to do that yet. First of all, to fill an entire mason jar would mean making like a cup and a half of oatmeal. That's a crap-ton of oatmeal. Also, you really need to shake the mixture up to evenly distribute the liquid, so if there's a secret here I would love if someone could fill me in.
But without further ado...vegan maple-walnut overnight celebrity oats.
Ingredients:
3/4 c. oatmeal (NOT instant)
2 tsp. chia seeds
1/4 tsp. cinnamon
1/4 c. raw walnuts, roughly chopped
2-3 tbs. maple syrup (to taste)
1 c. non-dairy milk of your choice -- I used O Organics soymilk which is my current brand of choice
Directions:
1. Combine oats, chia seeds, cinnamon and walnuts in a jar with a tight seal.
2. Pour the maple syrup and milk evenly over the oat mixture. Close the jar and shake well to combine.
3. Let sit in the refrigerator overnight. Warm in a water bath, the microwave (CAREFULLY) or eat cold. Top with fruit, more syrup or whatever your little heart desires.
