Partying Like Popeye

Popeye was undoubtedly the world's most famous lover of spinach, and I can't say I blame him. It's probably one of the least offensive vegetables there is. Plus it's almost laughably good for you. It's the superfood of superfoods. Like Batman + Superman + Mr. Incredible = Spinach.

So today, let's party like Popeye with some spinach. But not just any spinach. Spinach that has been mixed with greek yogurt and pesto and that is begging to be slathered on pita. Popeye missed out on never having had this spinach dip because it rocks.

Besides being so simple you could probably make it after a hard night at Bentley's, it's also not that bad for you. Someone call Charlie Sheen and tell him I just won at winning. This dip is great with any sort of vegetables or pita but I especially like it on carrot sticks. This one is another where you can FFTFW. Add more spinach or pesto if you'd like but watch out for garlic breath.

Spinach Dip:

1 C. low-fat (or fat-free depending on how obsessed you are with your caloric intake) greek yogurt

5 oz. cooked spinach, chopped

1/4 C. pesto (premade or homemade if you're an overachiever)

1/4 tsp. each cracked pepper and kosher salt

1. Using a sturdy strainer, press all the water out of the cooked spinach with the palms of your hands.

2. Mix all ingredients together in a bowl
